Strawberry Popsicle
I get so tired of all these popsicle recipies that require sugar. Strawberrys and most fruit is sweet enough. We need to start de-programming ourselves and our kids that says everything has to be super sweet.
Strawberrys are so yummy just the way they are! I have often blended them right up and put them into popsicle molds and the kiddos love them but they blend better with a little liquid.
I usually have a bag of frozen fruit in the fridge for smoothys or teethers. If you just put them in a bowl for a while they will defrost and get that sweet syrup all their own with nothing added but a little time. Then I pour into my blender (Bullet) adding either a scoop of yogurt, homemade juice, or today's winner was unsweetened almond coconut milk. Kids loved it!
I fill the blender a little more than half way with strawberries then pour in the milk/juice to 3/4 way up the strawberries and blend. After pour into molds and let freeze. If you don't mix it to long you still get some chunks of fruit in their that are supper yummy as well.
With fruit and yogurt we simply add our fruit (defrosted) and fill about 1/2 with yogurt play around with the amount till it mixed to the consistency you like. We use vanilla yogurt as a stable because I know unflavored is a bit bitter but I think I'll try that soon.
Give your kids a stack that won't leave you feeling guilty or worrying about their health.
What do you think? What are your favorite combos.
